Known simply as Loios, these monks have always had a deep connection to the history of the Alentejo, especially to its wines. Thus, this wine has been named after them and is made from traditional grape varieties of the region.

The grapes are gently pressed on arrival at the winery and only the free-run must is used, which is clarified by flotation. Fermentation is then begun at controlled temperatures between 16 - 18ºC. When alcoholic fermentation is complete the wine ages on the fine lees for 4 months, after which it is blended and prepared for bottling.
