Honey is a supersaturated sugar solution, generally more than 70% sugar and less than 20% water, and is therefore unstable. That's why it often crystallizes. Rosemary honey from "Santa Maria" (L.stoechas) is produced in Terra Quente Transmontana, at more than 400m altitude between Valpaços and Mirandela. Rosemary honey is light in colour with a smooth and very aromatic taste.
