When I think of my favourite Portuguese cuisine, bacalhau is one of the first things that come to mind. Bacalhau, or salted cod, holds a special place in our hearts and kitchens. It's more than just food; it's part of our heritage, used in countless recipes passed down through generations.

One of my favourite ways to enjoy bacalhau is in Bacalhau à Brás. This dish combines shredded bacalhau with onions, finely chopped potatoes, and scrambled eggs, creating a delicious and comforting meal.

To make it, soak the bacalhau in water for 24-48 hours to remove excess salt, then sauté with onions and potatoes before mixing in the eggs. Garnish with parsley and black olives for a true taste of Portugal.

Limpets, or lapas, are a hidden gem of Portuguese seafood, loved by locals in the Azores and Madeira. Their unique, briny flavour and slightly chewy texture make them a delightful treat.

There’s nothing quite like Sardinhas Assadas, or grilled sardines. To prepare, simply season the sardines with coarse sea salt and grill them over a hot fire until crispy and aromatic.
