This is one of Portugal’s most-loved soups and made with just a few key ingredients. It’s traditionally served as a starter, but with some crusty bread it makes a simple meal on its own.

 

Ingredients:

  • 1 large onion, chopped

  • 2 garlic cloves, chopped

  • 2 potatoes, peeled and diced

  • 100g chouriço, sliced

  • 1.5L water or stock

  • 100g kale or cabbage, shredded

  • 2 tbsp Portuguese olive oil

  • Salt to taste

Method:

  1. In a large pot, heat the olive oil and cook the onion and garlic until soft.

  2. Add the potatoes, water and a little salt. Simmer until potatoes are tender.

  3. Remove half the soup, blend until smooth, then return to the pot.

  4. Add the shredded greens and chouriço. Simmer for 10–15 minutes.

  5. Drizzle with a little more olive oil before serving.

Key products:

Serve with: a slice of bread and a glass of Adega de Borba Red Wine to round out the meal.

 

Feijoada – Bean Stew with Chouriço

Feijoada is comfort in a bowl. This dish is found all over Portugal and Brazil, with small variations depending on the region. It’s slow-cooked, filling and perfect for batch cooking.

 

Ingredients:

  • 1 onion, chopped

  • 2 garlic cloves, chopped

  • 1 bay leaf

  • 2 tbsp olive oil

  • 150g chouriço, sliced

  • 1 tin of cooked white or red beans (drained)

  • 1 tbsp tomato paste

  • 100ml red wine

  • Salt and pepper

Method:

  1. Heat the olive oil in a pot, add onion, garlic and bay leaf. Cook until soft.

  2. Add chouriço and brown gently.

  3. Stir in tomato paste, red wine and beans. Simmer for 15–20 minutes until thick.

  4. Adjust seasoning and serve hot with rice or crusty bread.

This dish keeps well in the fridge and tastes even better the next day.

 

Baked Eggs with Beans and Chouriço

 

Chorizo with baked eggs

 

This is a great one-pan meal for busy evenings. It’s simple to make and very satisfying — you can serve it straight from the oven with warm bread.

 

Ingredients:

  • 1 tin of beans (white or red)

  • 100g chouriço, chopped

  • 1 small onion, chopped

  • 2 garlic cloves, chopped

  • 1 tsp paprika

  • 2 tbsp olive oil

  • 4 eggs

  • Salt and black pepper

  • Fresh parsley to finish (optional)

Method:

  1. Preheat your oven to 180°C.

  2. In a pan, sauté onion and garlic in olive oil until soft.

  3. Add chouriço and paprika. Cook for 2–3 minutes.

  4. Stir in the beans and season.

  5. Transfer to an ovenproof dish, make four small wells and crack in the eggs.

  6. Bake for 10–12 minutes or until eggs are just set.

Serve with: a green salad and a glass of white wine or red if you’ve already opened one.
